Tzatziki (vegan). Traditional tzatziki uses greek yogurt as the base. We considered using a vegan coconut yogurt for this but decided on cashews instead. The reason being, cashews are simply wonderful, and cashews make excellent yogurt!
This is a vegan version of the traditional tzatziki recipe and it's made with homemade soy yogurt, it's very easy to make at home and totally worth it.
